Literally meaning ‘hot spices’, garam masala is a mixture based on black pepper that warms the body. GARAM masala is suitable for almost all dishes, giving them a special delicious aroma that makes Indian cuisine famous all over the world. You can just sprinkle a little of it on when the dish is almost done.

Rice with vegetables (recipe). Wash 1 cup of rice, drain in a colander. Heat a little oil or melted butter in a saucepan and add 1 tsp GARAM masala. After a few seconds, add the sliced peppers and fry for half a minute. Add 2 cups of finely chopped vegetables (carrots, cauliflower, legumes, etc.) and stir-fry for 4-5 minutes. Add the rice and stir again. Add 2 cups of water, 1 teaspoon of salt, stir again and bring to the boil. After lowering the heat, cook for a further 12-20 minutes (depending on the type of rice), until the rice has absorbed all the water and is soft and fluffy. After 5 minutes, fluff the rice with a fork. Garnish with green peas or lemon wedges.
